Her ser du kokke-stjernenes kokkekurs gratis

Du vil uansett kunne se dem i reprise.

Massimo Bottura

David Chang

Det er umulig å ikke like David Chang, er det vel, så når han inviterer til In the Time of COVID-19-kokketime er vi lydhøre.

Fra en Changs COVID 19-sendinger – frokost:

I got a few requests on how I cook my eggs – non-stick skillet a black steel pan or well seasoned cast iron pan will work too. Medium high heat to start then after eggs are dropped I lower heat to a medium flame. Use a lid to assist in cooking the eggs and don’t forget to account for carry over cooking time. Always turn off your heat before your eggs are actually done. The pan will continue cooking the eggs. Nothing is worse than overcooked eggs. Almost everyone seems to hammer them. I didn’t season these because of the high salt level in the sauce. we don’t usually eat eggs with toast unless I make bing/flatbread, something I will show another day. I’m actually glad to be cooking all my rice in a normalpot / donabe instead of a rice cooker or the crappy instapot because I have to be way more economical in how much I use. Portion the exact amount because there is no way to keep it warm and on hand to use like a modern day rice cooker. One of the greatest things to eat is well cooked short grain rice…when done well, it can be sublime. Whole thing took under 20min if you start the rice prior to cooking the eggs. Everyone can feed themselves and season how they want it. I also put out some furikake, sesame oil and soy sauce so people can season how they want. This dish is a Chang breakfast staple ______________________________________ Grade for calaphon pan: D- just above a F, still a failing grade. I was gonna give it a C+ because I thought they were affordably priced. They are not. I think if you are going to buy non-Stick coated pans there are plenty of cheaper options. You need to recycle non-stick pans after the coating chips away so it’s pointless to buy a fancy one. However if you use a non-stick pan correctly it will last you a long time. But you will still need to eventually replace them. which is why black steel or cast iron is the way to go, but I know that many people find the upkeep too much. That’s my recommendation. The more you use these pans the better they act as nonstick. They are built to last. Bon Apetito!!

As we all continue to do our part to flatten the curve and stay healthy, I encourage everyone to order as much of your groceries as possible, limiting trips to the grocery store. My friend @farmerleejones and the folks @theculinaryvegetableinstitute @the_chefs_garden_ohio have been growing produce for the nations best restaurants for years and now their impeccable veggies are available for home delivery! Can’t wait to dive into this box of goodies!
